Cheese Bread

Great for barbeques, brunches etc. Left over bread can be reheated in a microwave, or frozen for later use. It is delicious toasted.

  • 2 cups self raising flour
  • ¼ teaspoon salt
  • ½ teaspoon dry mustard
  • 125 gms soft butter
  • 1 cup grated tasty cheddar cheese
  • 2 tablespoons chopped parsley
  • 2 eggs
  • ¾ cup milk

Sift the flour with the salt and mustard. Rub in the butter with your finger tips (or do in 2 batches in a food processor until just crumbly), then add the grated cheese and parsley. Beat the eggs and milk together, add to the dry ingredients and mix together to a dough.(it will be a fairly wet dough).

Grease and lightly flour an oblong loaf tin, add the bread mixture and spread evenly*. Bake at 350-375° for 40-45 minutes (test with skewer). Serve warm.

(*I sometimes sprinkle on a little extra grated cheese before baking).
