Lemon Cordial

We must have drunk gallons of this when you were all growing up in Adelaide!

  • 8 lemons
  • 65 gms tartaric acid
  • 2 kg sugar
  • 2 and 1/3 litres hot or boiling water

Peel the lemon rind thinly, taking care to only remove the yellow skin. Squeeze the juice from all the lemons. Place the rind and juice of the lemons in a large saucepan or boiler with the tartaric acid, pour in the boiling water and stir to dissolve the acid. Add the sugar and stir until completely dissolved. Stand overnight in the saucepan, then strain and bottle.
