Use a 7-8cm biscuit cutter to cut about 9 rounds from each sheet of pastry. Place rounds on large oven tray. Spread each round with a thin layer of tomato paste, add a slice of salami, then about 3 thin slices of cherry tomato. Sprinkle with basil , then grated cheese, top with sliced olives and drained chopped anchovies.
Bake at 400° for about 10-15 minutes or until well browned. Allow to cool on a wire rack for a few minutes before serving (or cool completely and freeze).
Variations are limitless - can substitute bacon for the salami, add pineapple, lightly sauteed mushrooms, semi-dried tomatoes, etc.
