Devilled curried egg: Mash 3 or 4 hard-boiled eggs with a fork, add some chopped chives, finely chopped celery, small teaspoon of curry powder (or to taste), salt and black pepper to taste, and sufficient mayonnaise for filling to cling together (not too moist).
Chicken salad: Finely chop cooked chicken breast, add finely chopped basil, celery and chives, salt and pepper to taste and sufficient mayonnaise for filling to cling together (not too moist).
Salmon: Drain and flake a small tin of red salmon, add finely diced celery, chopped chives and a little mayonnaise.
Smoked trout and avocado: Spread one slice of bread with boned and flaked smoked trout or a smoked trout pate, spread ripe avocado on second slice with black pepper, and sandwich together.
Asparagus and Castello: Spread one slice of bread with drained canned asparagus spears, spread thin layer of Castello cheese (or a herbed cream cheese spread) on the second slice, add pepper and sandwich together.
