Ham and Apricot Seasoning

This is the seasoning I always use for the Christmas turkey.

  • 50 gms butter
  • 1 large onion, finely chopped
  • 1 clove garlic, crushed
  • 1 stick celery, finely chopped
  • ½ cup finely chopped dried apricots (can do this in a food-processor)
  • 2 cups stale breadcrumbs (use stale bread and do in a food-processor)
  • 500 gms ham, minced (can do this in a food processor)
  • ½ cup chopped parsley
  • 1 egg lightly beaten
  • ½ teaspoon mixed dried herbs (or ¼ cup fresh chopped herbs, including sage)

Melt the butter in a frypan, add onion, garlic and celery and saute for a few minutes. Add to the remaining ingredients and mix through evenly. Loosely fill the neck and main cavity of the turkey with the seasoning. (If you have seasoning left over it can be put in a small ovenproof dish, covered with foil and put in the oven with the turkey for the last hour of cooking) .
