Crunchy Chocolate Chip Biscuits

This is one very fast recipe – and was translated from the original recipe in Spanish! It makes up to 18 cookies. You can omit the chocolate chips – but who would!

  • 75 gms castor sugar
  • 125 gms butter or margarine
  • 150 gms plain flour
  • 1 egg
  • ½ teaspoon bicarbonate of soda
  • ½ teaspoon vanilla essence
  • ¼ teaspoon salt
  • 175 gms chocolate chips
  • 75 gms fine brown sugar

Preheat the oven to 190°C (375°F). Place the castor sugar, butter and brown sugar in a bowl, beat until smooth. Add the remaining ingredients and stir until well mixed. Place spoonfuls or small rounded balls of the mixture (mixture will spread during cooking) on a greased tray and bake for 10 to 14 minutes.

Viola! Eat them up!
