Pasta Salad

From Tim Rice, originally from the Weber BBQ Cookbook

  • 250 gms cooked spiral pasta (tri-colour is best)
  • 1 small onion, chopped
  • ¾ cup of cheese, cut into 1cm cubes
  • 1 medium carrot, grated
  • ½ cup chopped celery
  • Small tin pineapple, chopped(or you can use crushed pineapple)
  • ½ cup sultanas
  • ½ cup cashew nuts
  • 1 red apple, chopped (leave the skin on)
  • Dressing
  • 2 tablespoons mayonnaise
  • 1 teaspoon curry powder

Combine all the salad ingredients except the cashew nuts, in a bowl. Mix together the dressing ingredients and stir the dressing into the salad. Add the cashews just before serving..
