Spinach and Orange Salad

This recipe is a recent addition to the Evans–Markwort kitchen. It was inspired by yet another bunch of spinach from Dad’s garden and the fact that I was sick to death of making spinach pie! A great way of getting Greg to eat his greens!

  • A generous bunch of spinach
  • 3 strips of lean bacon
  • 1 cup of quartered mushrooms
  • 1 cup of snow peas
  • 2 tablespoons of capers
  • ¼ cup of soy mayonnaise (any type
  • of mayo would probably do but
  • the soy is really good)
  • ¼ cup of orange juice
  • 2 tablespoons of vinegar
  • Chives to taste

Cut the spinach leaves from the stalks and shred finely. Cut the rind from the bacon and slice into thin strips. Fry the bacon lightly for 2 or 3 minutes and drain on absorbent paper. Toss the spinach, bacon, mushrooms and snow peas together in a salad bowl. Add capers and toss in well.

Place the mayonnaise, orange juice and vinegar in a jar with a lid and shake well. The resultant mixture should be the consistency of a good gravy. Add to salad and toss well. Sprinkle with chopped chives.
